Braised Beef

Slow-braised beef with garlic, red wine, and thyme.

A rich, oven-braised beef dish flavoured with garlic, red wine and fresh thyme.

Recipe Card: Ingredients

·        2 lbs beef chuck roast, cut into 2-inch cubes

·        2 Tbsp Tweed Real Food Lime Pepper Grinder Salt - https://borderranges.com/products/lime-pepper-grinder-salt

·        2 Tbsp olive oil

·        4 garlic cloves, minced

·        2 cups beef broth

·        1 cup red wine

·        2 bay leaves

·        1 Tbsp fresh thyme leaves

Recipe Card: Method

1.      Preheat the oven to 180C.

2.      In a small bowl, prepare the Lime Pepper Grinder Salt seasoning.

3.      Season the beef cubes evenly on all sides.

4.      Heat the olive oil in a large casserole dish or oven-safe pot over medium-high heat.

5.      Brown the beef on all sides for 5-7 minutes, then remove and set aside.

6.      In the same pot, add the garlic and cook for about 5 minutes.

7.      Add the beef broth, red wine, bay leaves, and thyme, then stir to combine.

8.      Return the beef to the pot and bring the liquid to a simmer.

9.      Cover and cook in the oven for 2 hours.

10.  Remove from the oven, stir gently, then return to the oven for 1 more hour.

11.  Discard the bay leaves and serve hot.

Notes

Excellent served with mashed potatoes, polenta, or crusty bread. The flavour deepens if made a day ahead and reheated gently before serving.
